Since we hadn't eaten enough through the holiday week, we were obviously in desperate need of cake. We opted to try Microwave Mug cakes we'd seen in the newspaper recently. The recipes make a one mug serving of cake. We tried two: Honey Coconut Cream with Dried Cranberries and Chocolate Caramel.

It was a shockingly successful experiment. The cakes cooked in under three minutes and had good flavor. However, they hardened rather quickly, (which makes me nervous about what they are doing in my stomach) and I would suggest microwaving less time than advised and serving immediatly.

Turns out there's lots of variations and takes on this concept, including this eggless version, which may be a wise way to go!
